Eggplant Caviar

Made this for dinner and it was a huge hit. I got the recipe from Real Simple but changed a few things. Instead of pumpernickel bread, I just used a baguette. I also slathered a thin layer of goat cheese before I topped it off with the eggplant caviar. Enjoy!
